Hello everyone, and welcome back to my blog! Well, fall is finally here, and the days are getting a little shorter and a bit cooler here in Las Vegas. I love this time of year! I think it is because growing up in Hawaii I never really experienced the seasons changing. I remember the first time I saw a field of trees with orange, yellow and red leaves. I thought it was the most beautiful thing I had ever seen. So now that we get me gushing about fall out of the way let’s move forward.

This week I want to do something a little different. I want this blog to be helpful, and I think the best way to be of help is to be honest. Some weeks keeping up with everything that has to be done for this website is overwhelming. Some days I have writers block and can’t really get into the topic I am writing about. Some days the last thing I want to do is set up my light box and take pictures. Some days the thought of doing dishes again makes me want to scream. I know I am not the only one who feels like this, and we are all dealing with life the best we can. Sometimes it just plain sucks.

This was not what I had intended to post today, a lot of you who know me are aware that I schedule this blog months ahead of time and many times times it is written long before it needs to be posted. I am still trying to balance my personal life with this blog, and there are times where I have no motivation to write.

I have to remind myself to take time for me, to relax and stop staring at my monthly calendar and just cook. Cooking is my outlet, it’s my me time, it’s when I get to be creative and just forget everything around me. I know many of you have hobbies that make you feel like that.

This blog post is not going to cover a specific topic or real recipes, I want to show you all what I make for myself and my family on a normal day. No fancy plating, backgrounds or bright lights, just what I make for breakfast and how I use leftovers. I hope you enjoy this, leave me a comment if you would like to occasionally see more content like this!

Tofu Scramble

I like to add crumbled MorningStar Farms Veggie Bacon Strips to my tofu scramble, stuff into a hollowed out toasted burger bun and enjoy!

Don’t limit yourself! You can throw any protein you have into your tofu scramble, like here I added ham and chives.

Make tofu scramble part of your big breakfast! We just recently tried MorningStar Farms Maple Meatless Sausage Patties and they are delicious!

Rice

I like to use leftover rice to make breakfast and lunch bowls. Though, my favorite thing to do with leftover rice is to make fried rice.

Make it stand out

This Bowl has leftover tempura from the previous nights dinner, watermelon radish, avocado, garlic ginger kale, sesame stir fried green onions and a tuna patty made from a drained can of tuna, a tablespoon of Japanese mayo, diced onion and sesame oil.

This fried rice has soy sauce, sriracha, fish sauce, a lonely egg from the fridge and leftover Korean short ribs.

I love making folded Gimbap (Korean sushi) for breakfast, cut a sheet of nori in the center of one side, fill the 4 quarters rice and your favorite toppings. here I am using egg, cheese and bacon!

Be kind to yourself this week. Feed yourself good food, move your body and remember to focus on the positive. It is so easy for all of us to get so wrapped up in the negativity, take a moment this week to be grateful for what we have.
