3 Ingredient Lemon Cheesecake Dip

As the days cool down and the days start to get a little shorter it feels like we are heading straight to fall. Then you walk outside and realize it’s just wishful thinking and summer is still going strong in most of the country.
There is just something about summer that makes me want to create simple, bright desserts and I have definitely found a winner with this recipe. With just three ingredients, you can (literally) whip this dip up in just a few minutes. This dip has a velvety texture and a bright lemon flavor that pairs well apples, strawberries, butter cookies, graham crackers or even pretzels!

Lemon Cheesecake Dip
Ingredients
- 2 8oz. packs full fat cream cheese, softened
- 12 oz. lemon curd
- 1/2 teaspoon vanilla
- I like to top this dip with lemon zest and a drizzle of honey.
- You can add a tablespoon or two of powdered sugar if you don't think it's sweet enough.
- I like to serve this dip with graham crackers, apples and butter waffle cookies. You could use sugar cookies, strawberries, or even pretzels!
Instructions
- In the bowl of your stand mixer or using a hand mixture beat the cream cheese on medium high until the cream cheese is light and fluffy, about 4 minutes.
- Add the vanilla and 4 tablespoons of the lemon curd and mix until fully incorporated, being sure to scrape down the sides of the bowl as needed, about 2 minutes.
- Add the rest of the lemon curd and mix until fully combined, about 3 minutes.
- Chill for 15 minutes and serve with desired cookies and fruit.
