Roasted Chicken

Roasted chicken is one of those recipes that every home cook needs. From Sunday dinner to weeknight shredded chicken tacos, this recipe has you covered.

While a store bought roasted chicken can be inexpensive I like being able to customize the flavor of the chicken. When whole roasters are on sale I like to buy a few, cook them with different seasonings and freeze them so they are ready to go whenever I need them.

For this recipe I decided to share a simple roasted chicken with a lemon, garlic and herb butter. Using lemon zest in the butter gives the chicken a bright, lemony pop of flavor.

A whole roasted chicken with lemon butter

Ingredients

  • 1 whole chicken, 4-5 lbs.
  • Zest of 1 lemon (save the lemon!)
  • 4 tablespoons butter, softened
  • 1 teaspoon rosemary or sage or a mix of the two
  • 1 teaspoon thyme
  • 1 tablespoon kosher salt
  • 1 teaspoon pepper
  • 3 cloves garlic, minced

Instructions

  1. Preheat oven to 450 degrees
  2. Mix together softened butter, garlic, herbs and lemon zest, set aside
  3. Prepare the chicken for roasting, remove giblets from the cavity and pat dry with paper towels.
  4. Season the chicken liberally with salt and pepper, do not forget to season the inside of the cavity.
  5. Cut the reserved lemon into quarters and stuff into the chicken cavity (feel free to add a few sprigs of rosemary and thyme in there, too)
  6. Slather the butter mixture all over the chicken, including under the skin of the breast (be careful not to rip the skin!)
  7. Tie the chicken legs together using kitchen twine
  8. place chicken into a Dutch oven or roasting pan.
  9. Roast uncovered for 15 min, drop the oven temperature to 350 (still uncovered) and roast for 20 min per pound, or until a the internal temperature reaches 165 degrees.
  10. Allow the chicken to rest for at least 15 minuets before carving.
