Sausage, Apple, and Potato Salad
I have made many variations of this dish though the past few years, it is an easy sheet pan dinner that packs a flavor punch. I love roasted fruit in savory dishes and the roasted apples in this salad are sweet and pair well with the whole grain mustard dressing. You can either omit the potatoes or swap them with sweet potatoes or butternut squash in the fall for a seasonal twist. Sausage, Apple, and Potato Salad

Roasted vegetables and sausage over a bed of spinach and arugula with a whole grain mustard dressing
Ingredients
- 1 lb. Italian Sausage
- 1.5 lbs. baby potatoes
- 2 apples, cored and cut into 8 pieces
- 2-3 red or sweet onions quartered
- 1 tablespoon extra-virgin olive oil
- salt and pepper to taste
- 5 oz. baby arugula and spinach mix
- 1/3 cup apple cider vinegar
- 1/3 cup extra-virgin olive oil
- 3 tablespoons whole grain mustard
- 1 tablespoon honey
- 1 teaspoon basil, chives, or cilantro
- salt and pepper to taste
Instructions
- Preheat oven to 400 degrees
- Place onions, potatoes and apples on a baking sheet lined with parchment paper.
- Toss with olive oil, salt and pepper and bake for 25 minutes.
- Heat a non-stick pan over medium high heat, cook sausages according to package directions. Slice each sausage and set aside.
- Meanwhile, make the dressing. Mix together oil, vinegar, honey, mustard, salt, pepper and herbs and set aside.
- Arrange roasted potatoes, onions, apples and sausages over the arugula and spinach, drizzle with dressing and serve immediately.
