Sheet Pan Chicken Fajitas

Sheet pans fajitas are a weeknight win! This recipe takes affordable chicken tenders and turns them into this restaurant staple at half the price.

Instead of using pre made spice mixes, make your own! This saves money and helps monitor your sodium intake, for an extra kick add a few pinches of red pepper flakes to the spice mix.

Serve with warm tortillas and all your favorite toppings or pile on top of Spanish rice for a quick complete meal.

Sheet Pan Chicken Fajitas

Tender chicken roasted with pepper and onions

Ingredients

  • 1 1/2 lbs. chicken breast tenders, cut in half lengthwise 
  • 4 large bell peppers, any color, sliced into strips 
  • 1 large onion (or 2-3 small onions) cut into half moons 
  • 2 tablespoons neutral oil 
Spice Mix
  • 2 teaspoons kosher salt
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika 
  • 1/2 teaspoon cumin

Instructions

  1. Heat oven to 425 degrees 
  2. Place vegetables and chicken onto a sheet pan, being careful not to over crowd the pan, use several pans if necessary. 
  3. Drizzle with oil and toss to coat both the chicken and the vegetables. 
  4. Sprinkle the spice mix evenly over everything. 
  5. Bake for 25 minutes, remove chicken then continue to bake for an additional 10 minutes. 
  6. Toss the chicken with the pepper and onions on the sheet pan and serve with salsa, cheese, sour cream and tortillas.
