This curry udon is the prefect hearty weeknight dinner! Thick, chewy udon noodles are simmered in Japanese curry with thin sliced pork loin or chicken breast. You can use mild, medium or hot curry blocks depending on your preference.

Curry Udon

Thick, chewy udon noodles simmered in a delicious curry sauce
Prep time: 10 MinCook time: 25 MinTotal time: 35 Min

Ingredients

  • 1 medium onion sliced in half moons 
  • 1/2 lb. thin sliced pork loin or chicken breast 
  • 3-4 chives, thinly sliced 
  • 3.2 oz. package Golden Curry 
  • 4 cups chicken stock or dashi 
  • 2 tablespoons soy sauce 
  • 1 lb. udon noodles 

Instructions

  1. Heat neutral oil in a large pot over medium heat. 
  2. Add onion and cook until soft, about 4 minutes 
  3. Add pork or chicken and cook until the meat is no longer pink, 3-4 minutes. 
  4. Add the chicken stock or dashi and soy sauce and allow the to come to a boil, turn down to a rapid simmer and allow to cook uncovered for 10 minutes, 
  5. Place the curry cubes into a bowl and add 1 cup of the boiling liquid, stir until the curry is smooth. 
  6. Add the curry to the pot and stir. 
  7. Add  the udon noodles and simmer for 8-10 minutes, or until the noodles are cooked through and the sauce has thickened. 
  8. Sprinkle each bowl of Curry Udon with green onions and serve.
