French Onion Pork Chops

These pork chops are tender and juicy with a rich beef stock and red wine sauce with caramelized onions. You will want to be sure to use sweet onions in this recipe, the extra sugars in them will help them caramelize in about 25-30 minutes, remember to be patient! If you cannot find fontina cheese feel free to use mozzarella or your favorite white melting cheese. I like to serve this with French bread and a green salad for a filling meal. French Onion Pork Chops

Tender pork chops with caramelized onions in a rich beef stock and melty fontina cheese.

Ingredients

  • 2 teaspoons salt
  • 2 teaspoons Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoons garlic powder
  • 4 bone in pork loin chops
  • 1 tablespoon butter 
  • 1 tablespoon olive oil 
  • 2 cups sweet onions, sliced in half moons
  • 2 cups beef stock
  • 1/2 cup red wine
  • 1 teaspoon Worcestershire sauce 
  • 6 thyme sprigs tied with butcher twine
  • 1 cup fontina cheese 

Instructions

  1. In a small bowl mix together the salt, paprika, Italian seasoning and garlic powder. 
  2. Season both sides of the pork chops with the spice mixture. 
  3. Heat a large pan over medium heat with a drizzle of oil. 
  4. When the pan is hot add the pork chops and cook for 4 minutes on each side
  5. Remove the pork chops from the pan and add the butter and oil. 
  6. When the butter has melted and started to bubble add the onion and stir to coat them with the butter and oil. 
  7. Set the heat to medium low and let the onion cook for 25-30 minutes stirring occasionally. If places on your pan start to darken add a splash of water and stir the area. 
  8. When the onions are caramelized add the beef stock, red wine, Worcestershire sauce. and thyme to the pan. 
  9. Stir then let the sauce simmer for 15 minutes or until reduced to half, be sure to taste the sauce and add any additional salt after the sauce is reduced. 
  10. Add the pork chops back into the pan and let cook for an additional 10 minutes or until the pork chops have an internal temperature of 145 degrees. 
  11. Serve pork chops with the sauce and a sprinkle of fontina cheese and crusty bread.
