Folded Kimbap

Hello everyone and welcome back! Today I am excited to share with you these super simple folded kimbap. Kimbap is perfect for breakfast and lunch.

So, what is kimbap? Kimbap (Romanized) or gimbap is a Korean dish similar to sushi, it is made from cooked rice and gim (dried sheets of seaweed) and can be filled with vegetables, fish and meat, rolled and sliced. Folded kimbap is easy to make because you do not have to worry about rolling!

Folded Kimbap

Folded kimbap is an easy and delicious breakfast or lunch!

Ingredients

Spam and Egg Kimbap
  • 1 cup cooked short grain rice, cooled
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 4 nori sheets
  • 8 slices of spam
  • 4 slices cheese (American or Cheddar)
  • 4 eggs
Tuna Kimbap
  • 2 cups cooked short grain rice, cooled 
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 4 nori sheets
  • 2 cans tuna, drained and flaked
  • 1/4 cup mayonnaise
  • 1-2 teaspoons sesame oil
  • Pinch of salt
  • 4 slices of cheese (American or Cheddar)
  • Lettuce

Instructions

For the Spam and Egg Kimbap
  1. Toss rice with salt and sesame oil, set aside. 
  2. In a large frying pan over medium heat fry spam until it is evenly browned on both sides, about 2-3 minutes per side. Set aside on paper towels.
  3. In the same add the eggs one at a time. Using a spoon pierce the yolk and use a spatula to shape each egg into a square. Set aside on paper towels.
  4. Place the nori rough side up, using scissors make a cut from the bottom center of the nori to the center of the sheet, creating 4 quadrants
  5. Place egg on the bottom left, 2 pieces of spam on the top left, cheese on the top right and 1/4 cup rice in the bottom right.
  6. Bring the bottom left portion to the top left portion, then fold to the top right and then to the bottom right. (see video)
For the Tuna Kimbap
  1. Mix together the tuna, mayonnaise, sesame oil and salt in a small bowl.
  2. Place the nori rough side up, using scissors make a cut from the bottom center of the nori to the center of the sheet, creating 4 quadrants
  3. Place the Cheese on the bottom left, the lettuce on the top left, then spread 1/2 cup rice on the top and bottom right. 
  4. Spread 1/4 of the tuna mixture onto the the top left quarter (on top of the rice) 
  5. Bring the bottom left portion to the top left portion, then fold to the top right and then to the bottom right. (see video) 

Notes:

Make sure all of your ingredients are cooled and blotted with a paper towel before assembling or the nori sheets will become damn and shrivel.
