Homemade Granola

Homemade granola is one of my favorite things to make through fall. It is much more affordable to make your own granola, you may even have everything to make a batch of this granola in your pantry right now.

This granola is completely customizable, you can add the nuts you like best along with your favorite dried fruit and spices! I try to watch how much sugar we eat so this granola is not as sweet as store-bought but you can use to up 1/3 cup of brown sugar if you would like your granola to be sweeter.

Homemade Granola

Crunchy, lightly sweet and full of flavor!

Ingredients

  • 3 cups old fashioned rolled oats 
  • 1/2 cup raisins 
  • 1/2 cup dried cranberries 
  • 1 1/2 cups raw nuts, pecans, walnuts, cashews, almonds, pistachios 
  • 1 teaspoon pumpkin pie spice 
  • 2 teaspoons cinnamon 
  • 1/2 teaspoon salt 
  • 3 tablespoons brown sugar 
  • 1/4 cup maple syrup or maple butter 
  • 1/2 cup brown butter (recipe follows) 
  • 1 teaspoon vanilla 

Instructions

  1. Preheat your oven to 300 degrees Fahrenheit and line a sheet pan with parchment or use a non stick roasting pan. 
  2. Mix together the oatmeal, nuts, cranberries, raisins, pumpkin pie spice, cinnamon, brown sugar and salt  in a large bowl. 
  3. Mix together the brown butter, vanilla and maple syrup (or maple butter) together and pout over the dry ingredients and stir until everything is evenly coated. 
  4. Pour onto the prepared pan and bake for 35 minutes, stirring every 10 minutes. 
  5. Let the granola cool completely and store in an air tight container for up to 1 month.  
Brown Butter
  1. Heat 1 stick of butter under medium heat in a medium size pan stirring frequently.
  2. Once the butter has melted continue to stir the butter, it will begin to foam and sizzle. In about 4 minutes the butter will turn golden brown. The foam will subside a little and the milk solids will become a toasted brown color. 
  3. Immediately pour butter into a heat proof bowl and let cool until ready to use.
