Za'atar Drumsticks with Chickpeas and Wild Rice

Today’s recipe is the result of staying flexible. Originally I wanted to use chicken wings in this recipe and serve with some garlic wedges and salad. As you can see, that did not happen. I could not find whole chicken wings at any of the grocery stores I frequent and instead of postponing the recipe I decided to push forward and adapt the recipe to use inexpensive and widely available chicken drumsticks!

So, what is za’atar? Za’atar is a spice blend and a name for wild oregano, the za’atar in this recipe is the spice blend that contains oregano, marjoram, thyme, sumac and toasted sesame seeds, though the spices used in the blend can vary depending on what region of the Middle East it comes from. Za’atar is like an all purpose seasoning, it works well on vegetables, eggs, chicken, fish or even avocado toast!

Za'atar Spiced Drumsticks with Chickpeas and Wild Rice

Ingredients

  • 6 chicken drumsticks, about 2 lbs.
  • 1/3 cup extra-virgin olive oil
  • 1 tablespoon honey 
  • 1/4 cup lemon juice 
  • 3 tablespoons za'atar 
  • 1 teaspoon salt 
  • One 15.5 oz. can chickpeas, rinsed
  • 2 cups wild rice 
  • 1 tablespoon extra-virgin olive oil
  • 3 1/2 cups chicken stock 

Instructions

  1. Pre heat oven to 425 degrees.
  2. Lightly grease a roasting pan with oil, butter or cooking spray.
  3. Combine oil, honey,  lemon juice, za'atar and salt. Whisk until fully incorporated. 
  4. Place chicken in the pan and brush with oil mixture on all sides. 
  5. Scatter chickpeas around the chicken and drizzle any remaining oil onto to chickpeas. 
  6. Roast uncovered for 40 minutes, rotating the pan halfway through cooking. 
  7. Meanwhile, add stock, rice and oil to a medium pot. Bring to a boil, then cover the pot and reduce the heat to low. Simmer for 45 minutes, stirring occasionally. 
  8. To serve, place chicken on the rice and scatter the chickpeas around. Serve with a green salad.
