Sweet Potato Hash
This hash is one of my go to breakfasts and dinners that I have been making for years. Created out of odds and ends in my kitchen after the holidays this dish is not only tasty but it is a great way to use up what you have in your refrigerator.
Feel free to use whatever sausage you like or you can omit it completely to make a filling vegan meal. Get creative and add jalapeños or swap the bell peppers for Brussels sprouts!

Sweet Potato Hash
Roasted sweet potatoes with pepper, onions and chicken sausage

Ingredients
- 3 medium sweet potatoes, scrubbed and
- cut into 1 inch cubes.
- 1 red bell pepper, cut into 1 inch pieces
- 1 orange bell pepper, cut into 1 inch pieces
- 1 yellow bell pepper, cut into 1 inch pieces
- 3 onions cut into 1 inch chunks
- 1 lb. sausage of choice (pork, chicken, turkey, tofu)
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon chili flakes
- 1 teaspoon smoky garlic seasoning like Kinders Woodfire Garlic Seasoning
- 2 tablespoons extra-virgin olive oil
- Avocado (optional)
- Parsley (optional)
- Cilantro (optional)
- Fried eggs (optional)
Instructions
- Pre-heat your oven to 400 degrees.
- Line a baking sheet with foil or parchment paper
- Spread the peppers, onions and sweet potatoes onto the baking sheet in one even layer.
- Drizzle oil over vegetables and sprinkle with spice mixture.
- Bake for 35-40 minutes, or until the vegetables are cooked through and browned.
- While the vegetables are roasting cook sausages according to package directions, cool slightly then slice.
- To serve place large scoops of the hash into a bowl then top with a sliced sausage and any additional toppings you'd like.
